    In this busy hands-on class, we will focus on the purchase, storage and preparation of a variety of seafood - ocean fish, fresh water fish and shellfish - and demonstrate the versatility of fish in the menu - appetizer, salad, entrée and sandwich. Perfectly paired wines will accompany the dishes. We will address the common challenge of how to insure that the fish, once cooked at home, remains moist and flavorful, where to purchase and from whom and sustainability.
