In this talk, Dr. Katherine Amato (Northwestern University) utilizes data from both humans and non-human primates to explore the idea that fermented food use by humans began as a 'predigestion' strategy to increase nutrient availability in harsh, terrestrial environments with physically and chemically defended food resources.
